The superb gourmet spring menu of the Sequoia

A little ahead of the arrival of spring, the chef of the Séquoia restaurant of your Hotel Le Mans Country Club proudly presents his new menu and invites you to discover it on February 23rd. To whet your appetite, here is a small preview of what you can look forward to enjoying in our beautiful dining room overlooking the park and its century-old trees…

 

Local produce in the spotlight

Our beautiful Sarthe region is full of taste treasures – fine local produce that our chef makes a point of featuring in his dishes. So, why not start your flavour experience with the Sarthois escargot in puff pastry with a blue cheese sauce? You can follow it with a Loué poultry ballotine stuffed with spinach, or even a fillet of beef with parsnip cream sauce. Finally, regional cheeses are featured in the Sarthois cheese salad, a vegan dish, and in the cheese trio platter.

 

Land and sea

As we are located close to Brittany and Normandy, our chef also wanted to highlight seafood on his new menu. Try the subtle balance between land and sea with the combination of duck foie gras and salmon gravlax. Succumb to the temptation of the grilled lobster or the remoulade crab before tucking into the catch of the day. Finally, to end your meal in fine and sweet style, opt for the Pomme d'amour, the chocolate shell of which conceals a soft apple mousse, or the Exotique, a coconut/passion fruit dome topped with a banana passion fruit ice cream. Those feeling less indulgent will choose the fresh seasonal fruit salad or simply plump for the Miel and its yoghurt foam with shortbread and a scoop of honey ice cream...

Vegetables from the garden, produce from our local artisans, fish from nearby waters; there is no shortage of ingredients for a menu that finds the perfect balance between classicism and creativity. All these delights are yours to discover from February 23rd!
