It is with great impatience that we await the reopening of the restaurants on May 19th so we can unveil the new menu for the season. Before this eagerly anticipated date, you will be able to taste the latest creations by the chef of your Hotel Le Mans Country Club via room service in your room or as a takeaway. Read on for a foretaste of these delicacies ...

 

The finest produce

From the terrace of your Le Séquoia restaurant, you can see our vegetable garden where seasonal vegetables and aromatic herbs flourish. Our chef goes there to stock up daily and give his creations an incomparable touch of freshness. Carrying this gastronomic principle through to its logical conclusion, our chef’s cuisine also gives pride of place to regional and locally sourced produce, including free range poultry, Sarthe beef, aged cheeses and even escargots. Seafood is well represented, too!

 

Combinations rich in delicious charm

For what will undoubtedly be a beautiful 2021 season, our chef has composed a new menu on the theme of duets. For starters, you can discover the combination of salmon and tuna, escargot and chorizo, as well as the two-tone duo of white asparagus and green asparagus. For the main course, a teaming of land and sea is in the spotlight. The sweetbread and lobster and the salad bringing together lobster, foie gras, poultry and prawns offer flavours as surprising as they are seductive. You’ll surely not want to miss the platter of cheeses from the region before finishing off with some fruity sweetness. Using fruits such as apricot, strawberry, and raspberry, as well as rhubarb, our chef crafts desserts that reinterpret the classics with great creativity. Finally, vegans and children are not left out, as we have menus specially dedicated to their preferences.

As always, our chef focuses on the essentials: superb produce. With this firm foundation in place, he creates dishes that are alternately subtle and refined or which boast bolder flavours. Discover them on our terrace from May 19th or now with our takeaway service.
